Bright and savory, it really enhanced the sweet oysters with the Yuzu mignonette by making the whole combined mouthfeel clean and sweet.
As I discovered these last two years exploring Japanese Izakaya cuisine, Sake is very complex and the knowledge gained is so rewarding as you dive deeper into it. While it may seem intimidating to learn names because most bottles are printed in Kanji, just start small by buying a bottle at your local shop (usually the English name is printed on the back) Or, better yet just visit Jessica at Sakamai and learn about sake one Monday Happy Hour at a time!

Concluding my NY trip posts by saying I’m super grateful to meet people who lead their game in the NY/Global Japanese food community and seeing them be so welcoming. Leaders in Sake, Ramen, Takoyaki, Yakitori, all connected through IG and brought closer together with Kanpais. Bonus: Having @goramen blind taste approve the few skewers I made, made my night though 😁. New York Peace! Now for me to make moves in Cali.🍻🐙🐔🍜.
